The inspiration for this book came from the most commonly asked questions at my bread baking workshops.
Questions like: 'Why does my bread turn out fine one day, but other times it collapses? I never know what I'm doing right or wrong!'
I realised that what I considered 'essential' was really not in most bread baking books - the bread baking techniques, step by step explanations on how and why you do things.
I personally learn best, when I know why I ment to do whatever the recipe says I should do.
Why should I knead my bread dough for whole 10 minutes? Surely I can just give it five and it will be O.K.?
Why should I add steam to oven when I bake my bread? Why would the steam make any difference?
Why should I bother with cutting my bread before it goes into the oven? Surely that's just an esthetic thing?

I wanted to give you the 'why' and all the explanations behind the bread baking techniques, based on my 17 years of bread baking experience of baking bread at home and also working in small artisan bakeries.
The bread book itself has over 90 pages and nearly half of my bread book is about the ingredients, equipment, techniques and different stages in bread baking.
I wanted to make it as easy as possible, so thanks to fantastic photographer Shamaila Samuel, we have also included step by step pictures for all the techniques and also added beautiful photos for recipe section.
The second part of the bread book includes about 35 tried and tested recipes. I have included something for everyone - sourdough bread baking, sweet breads, quick no knead breads, gluten free and yeast free breads.
I wanted to give you the confidence you need to bake delicious bread
at home and the understanding of how bread baking really works.
The bread book is perfect for complete beginners, but more advanced bakers will find it useful too, especially if your bread baking is still inconsistent.
I should also mention, that I wouldn't be able to do this without the encouragements of my lovely bread baking students, who were a great inspiration and amazing motivation...
