Christmas Baubles Cake Pops

I've resisted to make cake pops for as long as I can remember. But I've been recently looking for a quick gift for a children party I was invited to and though, well, perhaps I can try these Christmas Baubles Cake Pops. I was quite impressed with my results and of course all the recipients loved them too. Well at least that's what I think, judging by the speed they disappeared from the sweet's table display at the party.

Here is what you need for my Christmas Baubles Cake Pops Recipe:


Lollipop sticks (plastic or paper)
360g cake
100g melted white or milk chocolate

For the topping:
150-200g white or milk chocolate (you can also use candy melts)
Decorations (smarties, sprinkles, hundreds and thousands)

Fondant

Food colouring

Ready made icing in various colours

Edible glitter

And here is what you do:

First of all make sure you are wearing a pair of food safe/catering gloves. Then crumble the cake with your hands into a large bowl. Do this by breaking the cake in half and rubbing them against each other. Try not to squish the cake too much as this stage.

Next step is to melt the chocolate in the microwave for about 20 seconds. If it needs a little longer, stir the chocolate first before you melt it further. Chocolate, especially white chocolate is so easy to burn, so be careful.

Then, just combine the melted chocolate and cake crumbs together and start rolling the cake crumbs into cake pop balls. Use tablespoon to spoon out the same amount of the cake mixture before you roll it.

Let the cake pops chill in the freezer for about 15 minutes or in the fridge for good 30 minutes to make sure the cake mixture is set and firm for the next stage.

Melt your chocolate for the coating. If you are not used to working with tempered chocolate, just use candy melts, which are easier to melt and use.

Dip your lollipop stick half an inch in the melted chocolate. Then push it in the cake ball, halfway up.
Place the cake pops back in the fridge for about 5 minutes.Take the cake pops back out again and dip them in the melted chocolate until the cake pop is completely covered. Make sure you have somewhere to put the cake pops, that makes them to stand up. Simple polystyrene foam is fine or something similar.
 
Chill them again in the fridge before the final decorating stage.
 
Now you can pretty much do what you like. I made the baubles tops from fondant icing, which is carefully stuck on with food sugar glue. If you have the tops ready before you did your cake pops in the chocolate you can also quickly add them before the chocolate sets.
 
To finish decorating the baubles, I just use royal icing to pipe the details, leave it to set and dust them with an edible glitter.
