If you don’t feel like baking, need a quick desert or your oven is on the blink, this Chocolate & Pear ‘No bake’ cake is the perfect solution.
No Bake Chocolate & Pear Recipe Ingredients
2 ripe pears, peeled, cored ans sliced
3 tablespoons of brandy (optional)
500g plain chocolate
3 tablespoons of golden syrup
100g unsalted butter
350g digestive biscuits
75g mixed nuts
1tablespoon cocoa for dusting
Ideally you need 20 cm (8inch) loose bottomed tin, greased and lined with greaseproof paper.
Here is what to do:
Soak pears in brandy. If you remember you can do this several hours before you start the recipe and the pears develop deeper flavour.
Put 300g of the chocolate, syrup and butter into a glass bowl and melt gently over a pan of hot water. You can also use microwave to do do this, just be really careful and slow with it.
Whizz biscuits and nuts in a food processor for a few seconds to roughtly crush them. You can also put the biscuits into a food bag and just crush them with a wooden roller.
Stir the biscuits mixture into the hot chocolate and add the pears in brandy. Mix well to combine.
Spoon into prepared tin and press gently down with the back of a spoon.
Melt remaining chocolate gently in microwave (or in a bowl over hot water) and pour over the biscuit mix. Chill in the fridge or somewhere very cold untill set. This can take about 30 minutes, but it depends on your fridge or how cold your kitchen is.
Dust with a cocoa powder and serve cut into wedges for a delicious after dinner treat.
